
Located in the fishing village of Liscannor, Vaughan’s Anchor Inn is a long-established bar and restaurant founded in 1979 by John and Annette Vaughan. From the beginning it has focused on Irish food shaped by local produce, particularly fish and shellfish landed nearby and guided by seasonal availability and daily catches from surrounding harbours.
Their son Denis developed his skills in the kitchen and helped establish the Anchor Inn’s strong seafood identity. His wife Lisa later joined the business and manages bookings and front-of-house operations, while Annette remains closely connected and continues to visit regularly.
A third generation is now part of the business. Chef James Vaughan took over the kitchen in 2021, while his brother Denis Jr works with their father across the family’s related ventures in Lahinch, including Spooney’s Ice Cream Parlour and Vaughan’s on the Prom.
Food is prepared in-house, including breads and ice creams, and guests can dine indoors or outdoors. The Anchor Inn continues to operate as a family-led restaurant with a close relationship to its community and longstanding food traditions.
